Tofu Chocolate Pudding

When I think of tofu, the last thing that comes to mind is dessert. “Tofu chocolate pudding? Isn’t tofu the thing that people use to mimic chicken? No thanks!” I was so skeptical when the trend of making vegan pudding with tofu started to circulate… how could this food that I associate with vegetarian meat substitutes or tofu scrambles or breakfast burritos be SWEET?

Well, let me tell you. I tried this Tofu Chocolate Pudding and, to my surprise, it’s delicious! Something about the tofu brings you the texture of pudding without having to use gelatin.

Tofu Chocolate Pudding

It’s creamy, it’s chocolatey, and it’s exactly what I crave when I want pudding. I love pudding so much, and this has brought it back to me in a way that makes my inner child say, “Wow!”

That’s great and all, but I have a bone to pick with most tofu pudding. Most of the recipes that are out there are just. too. fancy. I get that everybody is trying to be more health-conscious, but can’t a girl just want a junk food jello-tasting pudding?!

Tofu Chocolate Pudding

This recipe is so simple that I almost feel weird about putting up a recipe. You basically just throw all the ingredients in a food processor or blender and chuck that in the fridge. The hardest part of this recipe is waiting for it to chill. It’s tasty immediately after blending, but all of the pudding-like texture comes after a couple hours in the fridge. And honestly? I’ve found it tastes significantly better the next day… if it can last! I have some left over in my fridge from this photoshoot and you best believe I’m going to go eat it.

Tofu Pudding Topping Suggestions

While this pudding is good on its own, it is really the toppings that bring it to life. I have LOVED chopping up some dark chocolate, coconut, and walnuts to top my pudding. Alternatively, some raspberries and some coconut whipped cream would be just decadent.

Let’s talk about tofu…

Tofu is something that almost becomes a necessary evil if you’re pursuing a plant-focused diet. Most people don’t like it only because it hasn’t been prepared well. We have a whole post on “How You Can Make Tofu That Doesn’t Suck” coming soon, so we’ll let you know when we get an email list set up so you can subscribe.
